Sri Lankan Chocolate Cake

This is an easy and delicious Sri Lankan chocolate cake recipe
Ingredients:

  • 250g Butter
  • 5 Eggs
  • 200g Flour
  • 50g Cocoa powder
  • 2 tbsp Baking Powder (yes, it's quite a lot, but it turns out fine)
  • 250g Sugar
  • Dash of Vanilla Extract
  • 2 tbsp Milk

Method:
1) Preheat your oven to 180°C or 150°C (fan forced)

2) In a bowl, using the whisk attachment on a stand mixer (or if using a hand mixer, use the beaters), cream the butter until it is pale. Add the sugar and beat further on a low speed, increasing to high until incorporated. Stop the beater when it is light and fluffy/ Scrape the sides of the bowl to ensure the mixture is mixed properly.

3) While the mixture is mixing sift the baking powder, flour and cocoa powder. You want to sift it 3 times. I use 2 pieces of newspaper to sift. There will be a few clumps of flour, baking soda or cocoa powder. Just squash those clumps with a spoon or your finger.

4) Once again, scrape your bowl. Add your eggs, one by one. Then scrape your bowl.

5) Start adding in your sifted mixture, a little bit at a time. Set your mixer to the lowest speed.

6) Put in the milk and vanilla essence. When the mixture has been combined turn up the speed. When it reached mousse like consistency quickly mix to mix in any ingredients that weren't mixed properly.

7) Now pour the mixture into your lined and greased pan and then spread the batter evenly across your pan. Tap the pan against the table to remove any air bubbles.

8) Put it in the oven and let it cook for 40 minutes. Insert a skewer or a toothpick into the cake and if it comes out clean it's done! Leave to cool in tray then put cake on wire rack.
