Hoppers

Ingredients: 

  • 1 kg plain rice flour
  • 2 can coconut milk
  • 1 yeast sachet
  • Salt
  • 2 tbsp sugar
  • Eggs (for egg hoppers)

 Method: 

1) Put yeast, sugar and some lukewarm water in a bowl for about 5 minutes.

2) Put the following in a large bowl flour, 1 can of coconut milk and yeast mixture and mix well together until thick batter. Cover and leave it in a warm place about 4-5 hours.

3) Then add remaining coconut milk and salt and mix well until the mixture is thin.

4) Heat the hopper pan and grease some oil on the pan. Put some batter(full of ladle in it) and swirl the batter round to coat the sides of the pan.

5) Cover the pan with a lid and reduce the heat low. Cook for 3 minutes. When the edges are slightly brown removes the hoppers from the pan.

Egg Hoppers:

6) After you put the hopper batter in the pan and turn it around. Crack an egg into the pan. Put some salt and crack pepper. Cover the pan and heat over low flame. Until the egg is cooked.
