Peaches and Cream Pudding

We received this recipe from a good family friend of ours, when we had lunch at their house. She served this to us as dessert and fell in love with it and we immediately had to know how to make it. Considering how delicious was, it was surprising how easy it was to makeThis dessert takes very little time to make, isn't completely necessary to refrigerate (but is recommended) and you can serve and eat it straight away.It suit all occasions and since its easy to make you can make it quickly.Since this dessert contains cream, please note you will have to eat it within a few days. Feel free to have one layer if two seem too much. Another idea for children is to put this pudding in little glass cups or dessert bowls.


Ingredients: 
  • 1 can sliced peaches in syrup
  • 1 can crushed pineapple in syrup (pieces are just as fine)
  • 100g cashews finely chopped
  • 300ml thickened cream
  • Sponge cake (you can make it yourself or buy it premade)

Method: 

1) Find a dish slightly larger than the sponge cake to make the dessert in.

2) Drain the syrup from the fruit tins into separate jugs which you can easily pour from. (You'll be needing both syrup and fruit for this recipe)

3) Whip cream until light and fluffy. Make sure it is thick enough to stay in place but smooth enough to spread. Be careful not to overbeat!

4) Place first layer of sponge in the dish and pour ⅓ of each liquid on the sponge as evenly as possible to soak it.

5) Put half the pineapple on top of the sponge, making sure to cover the whole cake 
as evenly as possible. On top of the pineapple spread half the whipped cream.
Arrange the peach slices in whatever design or pattern you like and sprinkle 
the cashew nuts.

6) Place on top the second layer of sponge cake and pour on the rest of the syrup.
Layer on the rest of the pineapple, cream, peaches and cashews. As the top layers 
present this one neatly and carefully.

7) Serve immediately if you like or you may refrigerate and serve later.


As tempting as it is to eat straight away, it does taste better after refrigeration.
