Yellow Rice


Yellow rice is something we usually have on special occasions. Usually Saffron is used to yellow the rice but this version does not require any. Yellow Rice seems to make every meal a little more special and all the other dishes accompanying it taste a little better.

Ingredients:
  • 2 cups Basmati rice
  • 3 ½ cups water or vegetable stock
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 3 cardamom pods
  • 2 cloves
  • Curry leaves
  • 1 cinnamon stick
  • 8 peppercorns
  • 2 tbsp butter or margarine
  • 50g raw cashews (optional)
  • 50g sultanas (optional)

 Method:

1) Rinse rice thoroughly about 2-3 times.

2) Put water or stock in a pot and add the salt, turmeric, cloves, cardamom, curry leaves, 1 tbsp butter or margarine, cinnamon and peppercorns and bring to a boil.

3) Stir and add the rice. Cover with a tight lid and cook at a medium heat for 10-25 mins and remove the heat.


4) In a small pan melt remaining butter, add cashews and sultanas and saute until golden brown and add to the rice.


5) Serve with your favourite curries.
