Pol Roti (Coconut Roti)

This recipe makes 6 rotis.


Ingredients: 

  • 2 cups plain  flour
  • 1 cup desiccated coconut
  • ½ tsp salt
  • 1 cup water
Optional for savoury rotis:
  • 1 green chili chopped
  • Half onion chopped
  • A few curry leaves chopped

 Method: 

1) Mix flour, coconut and salt in a bowl. Then add water little by little until the mixture is stiff. You don't need all the water.

2) If you like as a savoury mix add this stage green chillies, onion and curry leaves.

3) Knead for 2 minutes. Divide dough into small balls (larger than a golf ball). Flatten out to ¼ inch thick on a greased tray. This should be about 8-10 centimetre diameter.

4) Preheat pan or non-stick pan. Remove roti from tray and cook on low heat for 4-5 minutes each side until they have lightly browned.
