Seeni Sambol

Ingredients:

  • 500g onions sliced
  • 50g Maldive fish flakes
  • 2 tbsp Chili powder
  • 1 cinnamon stick
  • Curry leaves
  • 3 pieces pandan leaves
  • 4 cardamom pods, bruised
  • Salt
  • 50g Tamarind soaked in warm water
  • tsp sugar
  • 100ml oil

 Method:

1) Heat the oil in a pan. Add onions and saute over medium heat for about 10 minutes, until onions have browned.

2) Add Maldive fish, salt, curry leaves, cinnamon, pandan leaves, cardamom and sugar and saute well.


3) Drain liquid from tamarind and add liquid to the mixture. Simmer for 2 minutes.


4) Remove cinnamon stick and pandan leaves before serving.
