Onion Rings

Onion rings are very crispy, tasty and are even great on the go.

Ingredients:

  • 1 large onion (You may want to use more)
  • 1  1/4 cups all purpose flour
  • 1/2 cup corn flour
  • 1 egg
  • 1 cup milk
  • 1 1/2 cups panko bread crumbs
  • 1 tsp pepper
Method:

1) Clean and peel onion.

2) Cut the onion into thick (approx. 3cm) slices.

3) In a 1/4 cup of the all purpose flour, dip the onion until completely coated. Dust off excess flour from onion and set aside. Repeat until all onion slices are coated.

4) In a bowl, place the 1 cup of flour and any remains from the 1/4 cup, 1/2 cup corn flour, 1 tsp chilli powder and 1/4 tsp pepper. Whisk until combined.

5) You may want to start heating your oil now.

6) Into the flour mixture, whisk in an egg and the cup of milk until smooth.

7) Pour in the panko bread crumbs into a separate bowl.

8) Coat the onion in the flour batter and let the excess drip off before coating it in panko.

9) Test the oil to see if it is hot enough by either  placing a crumb and seeing it bubble and float or dipping a wooden chopstick and seeing bubbles around it.

10) Fry onion rings for 2-5 minutes or until golden brown.

11) Season with salt.
