Summer Pavlova

The Christmas season has arrived. In Australia it's summer and its hot. Blazing hot. How about this nice Pavlova with fruits to cool you down?.

Ingredients: 

  • 5 egg whites
  • 1 tbsp cornflour
  • 1 tsp vinegar
  • 500ml cream
  • 1 1/2 cups sugar
  • 1 tbsp icing mixture/icing sugar
  • fruits of your choice
Method:

1) Grease and line the baking tray. Then, preheat the oven to 160°C or 320°F.
2) Draw a 20cm circle onto the baking paper. We'll be using this as our template. 
3) Beat the egg whites in a bowl until soft peaks form.
4) Once it's reached that stage, gradually add in the sugar, 1/4 cup at a time, beating until the sugar dissolves between additions.
5) Fold in the cornflour and vinegar.
6) Spread meringue into the drawn circle.
7) Bake for 1 hour to an hour and a half or until the meringue is firm.
8) Whip cream and icing mixture and prepare fruits.
9) When the pavlova is completely cooled top it off with cream and with fruits of your choice.
