Homemade Pizza/Calzones


Ingredients:
Dough:

  • 1kg flour
  • 2 tbsp salt
  • 2 sachets of 7 grams of dry yeast
  • 650ml warm water

Mushroom sauce:

  • 2 slices prosciutto
  • 1 onion
  • 1 1/2 cup mushrooms
  • 1 handful mozzarella cheese
  • 1garlic clove
  • 30g butter
  • 1/2 cup heavy cream
  • 1/2 cup milk

Toppings:

  • Chicken
  • Capsicum
  • Sundried tomatos
  • Olives
  • Jalapenos


  • Tomato sauce
  • Egg(for eggwash)


Method:

1) To start add the yeast to the warm water. 

2) While the yeast is activating, put some salt with the flour and mix. 

3) Begin mixing the water and yeast. 

4) Make a well in the middle of the flour and pour the yeast and water into the well. Mix. 

5) Put the dough onto a floured counter top and knead it to try and make the dough come together.  Once its come together make is more square/rectangular, cut the dough into however many pieces you want. Make these sections into balls. Then put the balls of dough onto a tray with semolina or breadcrumbs. Cover the dough with glad wrap and leave them to rest in a warm place.

6) Meanwhile work on the filling. Begin the filling by frying the onions. Add the mushrooms once they've browned up a little. 

7) While the onions and mushrooms are being cooked, melt some butter in a saucepan. When the butter has melted add in the milk and then the cream. Then add the cheese. Stir to combine. Add some pepper and salt to your preference. 

8) Pour this sauce over the mushrooms and onions which should have finished cooking. Stir. 

9) Add some prosciutto and let the sauce thicken up a little. 

10) In another pan, cook the chicken and season it with some salt and pepper. 

11) When the chicken is done, you can get your dough out. Roll the dough that has been rested trying to keep it as round as possible. 

12) Put some tomato sauce on top. If you're making calzones (folded pizzas) try not to put it to the very edges. Put the mushroom mixture on top. Put the chicken, and any toppings you want. I had capsicums, olives, jalapeƱos and sundried tomatoes. 

13) Egg wash the edges of the pizza/calzone. If you are making a calzone, eggwash half of the edges. It will make it much easier when you try to close it. You may need to readjust the mixture when folding it if your making a calzone. Use a fork to press down on the edges of the calzone. Egg wash the top of the calzone. Put it in the oven for 20-30 minutes at 200C.
