Sri Lankan Chocolate Cake

This is an easy and delicious Sri Lankan chocolate cake recipe Ingredients: 250g Butter 5 Eggs 200g Flour 50g Cocoa powder 2 tbsp Baking Powder (yes, it's quite a lot, but it turns out fine) 250g Sugar Dash of Vanilla Extract 2 tbsp Milk Method: 1) Preheat your oven to 180°C or 150°C (fan forced) 2) In a bowl, using the whisk attachment on a stand mixer (or if using a hand mixer, use the beaters), cream the butter until it is pale. Add the sugar and beat further on a low speed, increasing to high until incorporated. Stop the beater when it is light and fluffy/ Scrape the sides of the bowl to ensure the mixture is mixed properly. 3) While the mixture is mixing sift the baking powder, flour and cocoa powder. You want to sift it 3 times. I use 2 pieces of newspaper to sift. There will be a few clumps of flour, baking soda or cocoa powder. My daughter made a delicious cake for all of my family, it was very delicious. Soft, creamy and perfect! Ingredients: 125g butter or margarine 1 cup sugar 2 eggs 2 tsp vanilla essence 2/3 cup cocoa ½ cup hot water 2 tsp vinegar 1 cup milk 1 3/4 cups plain flour 1 tsp baking powder 1 tsp bicarbonate of soda A pinch of salt Chocolate Vienna Icing Method: 1 ) Beat butter until creamy, add sugar, eggs and vanilla and beat until light and fluffy. Mix cocoa and water to make a smooth paste. Gradually add to the creamed mixture. Christmas Special: Yule Log Cake

Merry Christmas everyone! Today I have a very special recipe, a Yule Log Cake! Ingredients: 6 eggs (separate yolks and whites) 2 tbsp cocoa powder 1 tsp instant coffee (optional) 50 ml vegetable oil 100 g plain flour 1/2 tsp baking powder 120 g caster sugar Method: 1) Preheat oven to 180°C and grease and line two baking trays (23x33cm). 2) Dissolve the cocoa (and coffee) in 80 ml of warm water. 3) Beat egg whites until soft peaks form. Add 2 tbsp of caster sugar and beat until firm peaks firm. The egg whites can be kept aside in another bowl. 4) Beat the egg yolks with the rest of the caster sugar until it has doubles in volume and is pale in colour (about 5 minutes). While you are doing this sift the flour and baking powder a few times. 5) Beat in the oil.
